Ingredients

  • 1 lb chicken tenders
  • 2 tbsp olive oil
  • Juice of 1 lemon about 2 tbsp
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley chopped (for garnish)

Method

  1. In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper until well combined.
  2. Add the chicken tenders to the bowl and coat them evenly in the marinade. Cover and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).
  3. Heat a grill or skillet over medium-high heat. If using a skillet, add a small drizzle of olive oil to prevent sticking.
  4. Remove chicken from the marinade and let the excess drip off. Cook for 5–7 minutes per side, or until golden brown and the internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for a few minutes after cooking to lock in juices. Garnish with fresh chopped parsley and serve warm. Optional: Serve with tzatziki sauce for dipping!

Notes

For best results, allow the chicken to marinate for at least an hour. Serve with a Greek salad or pita bread for a complete meal.
