Ingredients
  

  • 6 thin-sliced chicken breasts
  • 1 small bag fresh baby spinach
  • 1 large package sliced mushrooms
  • 1 container green onion cream cheese
  • 8 oz shredded mozzarella cheese
  • ½ cup chicken broth
  • ¼ cup olive oil
  • 1 dash pepper
  • 1 dash herb and garlic seasoning

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a large baking dish with olive oil.
  2. Arrange the thin-sliced chicken breasts evenly in the baking dish. Season with pepper and herb and garlic seasoning.
  3. Spread a layer of green onion cream cheese over each piece of chicken.
  4. Layer the sliced mushrooms over the cream cheese, then add the fresh spinach on top.
  5. Drizzle olive oil evenly over the top, pour in chicken broth, and sprinkle shredded mozzarella over everything.
  6. Bake for 30–35 minutes until the chicken is cooked through and the cheese is melted and bubbly.
  7. Let rest for 5 minutes before serving to allow the sauce to thicken slightly. Serve warm.

Notes

You can substitute green onion cream cheese with garlic herb or plain cream cheese if preferred. Great for keto or low-carb meal prep.
