Ingredients
  

  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 12 oz pasta rotini or your favorite shape
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 4 cloves garlic minced
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook the pasta in salted boiling water until al dente, then drain and set aside.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook 6–7 minutes until golden and cooked through, then remove from skillet.
  3. Melt butter in the same skillet. Add garlic and sauté 1 minute. Pour in chicken broth and heavy cream. Simmer gently.
  4. Stir in mozzarella, cheddar, and Parmesan until smooth and melted.
  5. Add cooked chicken and pasta back into the skillet. Toss to coat and simmer 2–3 minutes.
  6. Garnish with fresh parsley and serve hot.

Notes

For extra creaminess, add more mozzarella. Adjust Cajun seasoning to your spice preference.
