Air Fryer Hash Brown Patties

Crispy golden hash brown patties from frozen in about 12 minutes. One ingredient, no oil, and no soggy middles. The right temperature makes all the difference.

  • 4 frozen hash brown patties do not thaw
  • Cooking spray optional, for extra crisp
  • Salt and black pepper optional, to season after cooking

Method
 

  1. Preheat the air fryer to 400 degrees F for 3-5 minutes. A cold basket lets the patties steam before they crisp, so don't skip this.
  2. Arrange the frozen patties in a single layer with space between them. They should not touch, overlap, or stack. Cook in batches if they don't all fit.
  3. Air fry 8-10 minutes, flipping once at the 4-5 minute mark. Basket-style air fryers heat from the top, so the underside needs the turn.
  4. For extra crispy patties, add another 2-3 minutes, watching closely. Past about 15 minutes total they begin to dry out rather than improve.
  5. Season with salt and pepper and serve immediately. Don't stack them on the plate; trapped steam softens the crust within a minute.

Notes

400 degrees F is the key. Many recipes call for 350, which is too low: the inside heats through before the surface can dehydrate and brown, leaving the patties pale and soft. McCain's own package directions call for 390 degrees F.
If your air fryer runs hot or your patties are thin, 380 degrees F for 10-12 minutes is a gentler alternative.
Don't overcrowd the basket. An air fryer is a small convection oven and needs room to move hot air across the surface. Packed in, the patties trap moisture and steam each other. Two batches beat one crowded one.
You don't need oil because frozen hash brown patties are par-fried at the factory; the ingredient list is usually potatoes and vegetable oil. A light spritz still gives a crisper, more deep-fried texture if you want it.
Season after cooking, not before. Salt draws moisture to the surface and works against crisping.
Brand matters. Ore-Ida crisps best in most testing, store brands are close behind, and Trader Joe's tend to come out softer. Thicker patties need an extra minute or two.
Cook from frozen. Thawed patties release water and go soggy.
Reheat leftovers in the air fryer at 350 degrees F for 3-5 minutes. Store up to 3 days in the fridge; don't refreeze cooked patties.
For homemade patties: grate 2 large russet potatoes, squeeze very dry in a towel, mix with 1 egg, 1/2 tsp salt, 1/4 tsp pepper, and 1 tbsp flour. Shape 1/2-inch thick, spray with oil, and air fry at 400 degrees F for 12-15 minutes, flipping halfway.
