- 1 lb ground beef
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp ground cumin
- Salt and black pepper, to taste
- 1 lb frozen hashbrowns (no need to thaw)
- 1 can Rotel (diced tomatoes with green chilies)
- 1 can cheddar cheese soup
- ½ cup sour cream
- 1 packet taco seasoning
- 2 cups shredded Colby Jack cheese
- 2 cups Doritos, lightly crushed
Instructions
- Preheat the oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat, then drain any grease.
- Season with onion powder, garlic powder, cumin, salt, and pepper, stirring to combine. Remove from heat.
- In a 9×13-inch baking dish, mix the cooked beef with frozen hashbrowns, Rotel, cheddar cheese soup, sour cream, and taco seasoning until evenly combined.
- Place the dish in the oven and bake uncovered for 30 minutes.
- Top with shredded Colby Jack cheese, then sprinkle crushed Doritos over the top.
- Bake for another 10 minutes, or until the cheese is bubbling and the Doritos are slightly golden.
- Let cool for a few minutes before serving. Enjoy!
Notes
You can swap Colby Jack with cheddar or Mexican blend cheese. Use spicy Doritos for an extra kick!
